What is Kopia?       https://github.com/kopia/kopia?tab=readme-ov-file   Although  I have not tried this myself after viewing the video I think this is the easiest way to make a backup I have seen for a linux system. I recon he is using rsync in the background. Whatever it is a super neat and easy to use backup tool. 😋
