In Stretch you should be able to just run update-grub and it will automatically find your new installation and add it. I usually install GRUB to the partition of the new installation with the installer but I'm not sure if that's strictly necessary. Works for me and I've done quite a few new installs that way. No need to manually add it.

Yeah, I've done things this way before, if the distro's installer has a way to not install the boot loader. I added the custom entry in /etc/grub.d so that I don't have to go back to Stretch and run update-grub whenever Kubuntu gets a kernel update.
